I like your plan of creating a packet for each major sections. I myself am building something of that sort as I go through the CCNP. Each major sections (FR, OSPF, BGP, etc.) I have a 4-inch binder for and continue to add extra resources as I find them. Hoepfully this will serve me well later on when I'm working on CCIE.

As far as dynamips goes, have you seen the following thread?:
Passed CCIE Labs using Dynamips. Hopefully that would give you some creative ideas.
